Note - I didn't bring my professional camera on this trip, so all photos were taken on my iPhone 6. I apologize for poor-lighting in some photos but I didn't want to experience the whole trip through my camera lens as it was a long overdue break.
Birthday Dinner at Plant Food + Wine
This restaurant is a full dining experience. Our server, Juan, was so educated and passionate about the food, which was thrilling for a food-geek like myself. He even gave us a "backstage" tour of the kitchens and the culinary academy on the grounds.
The plate features three nut-based cheeses:
White Truffle (cashew-macadamia)
Smoked Cheddar (cashew-macadamia)
Mixed Peppercorn (cashew)
The plate also came with pickled cucumbers, watermelon radish, papaya, and fennel crackers.
In between our main course and dessert, we got to tour the kitchens and watch our dessert be prepared. There was a cooking class in session (upper right.) Notice the back wall completely filled with dehydraters (not something you'd see if every restaurant kitchen!) On the bottom right you can see all of the veggies pickling on display.
Dinner at Lido Restaurant and Bayside Grill
Not photographed: we enjoyed delicious cocktails with our meal. I got the Poolside Palom with Mezcal, Blood Orange, Blue Agave, Pink Grapefruit and Prosecco while Eli enjoyed The Botanist with Gin, Wildflower, Cucumber, Dill and Lime.

The real magic happened when we arrived. We found out that all of the condiments and sauces in the restaurant were made-in-house!
