I think there's something to be said for a vegan cheese sub that's made entirely of whole foods. I'm usually one to mix a homemade cheese with processed vegan cheese, but this sauce is so tasty, it does not even need the addition. This mac is 100% guilt free and 110% tasty! It has a thick and creamy texture that reminds me of old school nacho cheese from a snack bar. The tang from the tahini adds the perfect bite to the sauce and the boiled butternut squash purées into the most beautiful yellow-orange you've ever seen.
COOK TIME: 15 minutes
TOTAL TIME: 20 minutes
2 batches Butternut Squash Cheese sauce
1 box whole wheat medium shells
1. Boil water and cook pasta.
2. Assemble butternut squash cheese in blender.
3. Combine warm cheese sauce with noodles until generously covered. Enjoy!
