These sweet potato fries have been my go-to this week. They're salty, smokey, sweet, and couldn't be easier to make. I don't even peel the potatoes. I just chop and bake. Seriously what could be easier?
2 medium-large sweet potatoes
1 tbsp EVOO
1 tsp creole/cajun seasoning
sea salt to taste
1. Preheat oven to 400 F
2. Wash and chop sweet potatoes. Do your best to get them the same size and thickness for even cooking.
3. Line a cookie sheet with wax paper and evenly spread the fries.
4. Drizzle with EVOO and creole/cajun seasoning.
5. Bake for about 20 minutes, then remove cookie sheet from the oven. Carefully flip each fry with a fork and continue baking for another 5 minutes. Allow fries to cool before eating!
