I LOVE sauerkraut and I think it works so well in this recipe because the beans are very mild in taste. The kraut really adds dimension and texture. If you think about it, this is essentially just a spin on one of my favorite recipes, my Brussels Sprout burritos. I guess I have a thing for refried beans and cabbage.
Cook Time: 5 minutes
Total Time: 7 minutes
Yield: 1 quesadilla
2 medium tortillas or one large
1/2 cup vegan refried beans
1/4 cup sauerkraut
1 tbsp hot sauce/salsa
cooking spray or oil of choice
1. Spread the beans on the tortillas.
2. Top with sauerkraut and salsa.
3. Heat a large pan over medium heat and coat with cooking spray or oil.
4. Cook quesadilla until edges are brown and crisp. This should take about 2-3 minutes on each side.
