The Story behind The Vegan Nugget
Hi there. I’m Christina, or as my friends call me, “the vegan nugget.” I’ve been a vegan since August of 2011 after reading “Skinny Bitch” while on vacation with my family in Orlando. I had stopped eating red meat in 2009 and went on to become a Pescetarian in 2010. Though, I had given up meat because of my love of animals and desire to be healthy, I was still very unhappy with my body.
When I read “Skinny Bitch,” I thought to myself I could NEVER EVER live without cheese. I was mad at myself for feeling that dairy controlled my diet and that it sounded like the end of the world to give it up, so I challenged myself and my will power. I vowed to go vegan for thirty days. To my shock and surprise, I was absolutely hooked. I decided to try another thirty days…and after two months, there was no turning back. I had lost 18 pounds and felt more alive and had more energy than ever! I had made the choice, I was a vegan through and through.
In the beginning, one of the things that was the most exciting to me was the entire world of veggies, fruits, and vegan treats I never knew existed. A trip to the grocery became an exciting adventure instead of blind exercise spent putting boxed, processed foods mindlessly in my cart.
Cooking became not just something I did to eat, but rather a fun pass-time and a creative outlet all in one.
I soon fell into the world of vegan blogs, they captivated me with bright, beautiful photos of colorful, nutritious food but baffled me with their intensely long lists of ingredients I had never heard of and didn’t know where to get. Now let’s get one thing straight…I have always been a vegan on a budget. As a college student and now a twenty-something living in New York City, there are just some things that have been out of my means. However, the phrase “necessity is the mother of invention” didn’t just randomly occur to Plato and I have found that through my necessity to save money and use the ingredients I already have in my kitchen, I have been able to create brand new recipes that are both exciting and delicious. Of course, there are some pricey ingredients a vegan just can’t live without and we all deserve a splurge every once in a while, but for the most part, I plan all my meals for the week based around the same core ingredients.
