I have been seeing this baby all over social media and could not wait to get my hands on it. Right now, the product has not made it into any Manhattan grocery store and thus, is only available for purchase online. I was so glad I got to try a sample-size of one egg to test out the product because now I know it will be totally worth it to order online!

Follow Your Heart's Vegan Egg Review

INGREDIENTS: Whole algal flour, whole algal protein, modified cellulose, cellulose, gellan gum, calcium lactate (plant source), carrageenan, nutritional yeast, black salt.
TASTE: A very mild "egg" taste, salty but not overly salty. (I actually found it more flavorful in its liquid state and felt that the flavor became more muted when the egg was cooked.)
TEXTURE: Spot on. The texture in both the liquid and scrambled form was truly spot on and very much like a traditional egg. Although, I would add that in liquid form, the egg is quite sticky/gelatinous. I would love to use the egg in a quiche and see what the texture is like when baked!
OVERALL THOUGHTS: I am a big fan of Follow Your Heart's Vegan Egg. While making a scramble was a pretty traditional way to use the egg, I felt it would allow me to get the best sense of the egg. I definitely recommend adding fresh veggies and spices to your scramble as the taste is quite mellow. I also recommend finding a way to sneak some extra protein into a meal made with the vegan egg as the egg only has 1 gram of protein per serving. If you want a protein-packed vegan breakfast, I still recommend making a tofu scramble. However, if you're bored of the same old vegan brunch options, I think the vegan egg is just the thing to re-inspire you in the kitchen. I'm definitely looking forward to experimenting with some in a quiche or breakfast souffle!
Vegan Breakfast Burrito
COOK TIME: 10 minutes
TOTAL TIME: 15 minutes
YIELD: 1 burrito
1 vegan egg
1/2 cup kale, chopped
1/4 cup bell pepper, chopped
1/4 onion, chopped
1/2 cup refried beans
1 large tortilla
salt and pepper to taste
hot sauce to taste
1. Make your vegan egg. Please note this requires ice cold water and takes longer to cook than an average egg. Follow Your Heart suggests 6-8 minutes.
2. In a different pan, sauté kale, pepper, and onions.
3. Heat refried beans. Combine sautéed veggies and scrambled vegan egg.
4. Assemble burrito and enjoy!
