The Vegan Nugget is just over a year old and it could be said that I've had a bit of writer's block lately...but that is all about to change very soon...
For Christmas, my wonderful boyfriend bought me a subscription to the Vegan Cuts monthly Snack Box. Even before my first box arrived I knew it was exactly the thing I needed to re-inspire me and spring board my blog into the new year. This monthly box features 7-10 brand new vegan items. I feel so lucky to be one of the first people to get to try the Vegan Egg (which was included in this month's box and has barely made its way into my local NYC grocery stores!)
This month's featured item is Upton's Jackfruit Carnitas. After seeing a few viral videos showing pulled-jack fruit sandwiches, I have been super excited to get my hands on some. I hope you enjoy my recipe and review and look forward to many similar posts in the 2016.
UpTon's Naturals chili lime carnitas Review
THE STATS: Upton's Naturals Chili Lime Carnitas

- 7 grams of carbohydrates, 1 gram of protein
*I used this package to serve 2 instead of the suggested 4 and felt that the proportions were just right.
INGREDIENTS: Jackfruit, Onion, Vinegar, Line, Evaporated Cane Juice, Sea Salt, Black Pepper, Garlic, Cumin, Coriander.
TASTE: Bright, tangy, with a touch of heat.
TEXTURE: Shredded, but not meat-like. Reminded me more of hearts of palm.
OVERALL THOUGHTS: I really enjoyed Upton's Chili Lime Carnitas. I felt the lime flavor was very overpowering and incredibly tangy, so I cut through some of that with something creamy (see recipe below!) but I would definitely be interested to try their BBQ flavor as well. The biggest issue for me is that it is marketed as a meat-substitute but it only provides 1 gr. of protein. I solved this problem in my recipe as well but definitely be sure to pair it with a protein if you are looking for a filling and complete meal.
The Jackfruit truly is ready-to-eat and they definitely scored points in my book for the convenience factor. I could easily enjoy this on a sandwich, in a salad, tacos, burritos, bowls, and more!
Jackfruit Carnitas Subs with Kale Slaw
PREP TIME: 10 minutes
COOK TIME: 5 minutes
TOTAL TIME: 15 minutes
YIELD: 2 sandwiches
1 package Upton's Naturals Jackfruit Chili Lime Carnitas
1 loaf French bread
1 cup shredded cabbage
1 cup shredded kale
1/2 cup julienned or finely chopped carrots
1/4 cup green onion, finely chopped
2 tbsp hummus
1 tbsp vegan Goddess dressing (I used Annie's)
oil or cooking spray for Jackfruit
1. Finely chop or shred all veggies
2. Combine in a mixing bowl with hummus and Goddess dressing. Stir until well mixed.
3. Heat Jackfruit in a little oil over medium heat or until warm.
4. Assemble sandwich.
*I had leftover slaw and it was so tasty, I paired it with some gluten free crackers later in the evening!*
