YIELD: about 5 servings
1 14oz block extra firm tofu, drained
1 cup fresh green onions
1 small red bell pepper
1/4 cup fresh cilantro
3 tbsp vegenaise
1 tsp yellow or dijon mustard
1 tsp turmeric
1 tbsp nutritional yeast
1 tsp hot sauce (I used sriracha)
salt and pepper to taste
1. Wash and chop green onions, bell pepper, and cilantro.
2. Transfer drained tofu into a medium-large mixing bowl. Break apart using a fork until tofu is crumbly.
3. Add vegenaise, mustard, turmeric, nutritional yeast, hot sauce, salt and pepper. Stir to combine.
4. Add in veggies and mix thoroughly. Adjust spices if needed.
5. Serve chilled. Enjoy!
This salad is a great vehicle for extra veggies and protein. Feel free to add carrots, celery, water chestnuts, sugar snap peas, nuts, seeds, etc. If you want a lighter option, sub hummus for vegenaise.
